True Italian Restaurants are far and few between. And Italian Cookbooks are no different. My husband's recipes come straight from Southern Italy where his grandmother learned to cook from her mother before her. My mother-in-law, Katie Marano followed suit and passed on her skills to her son. I say skills, but what they did was truly an art form. They never worked with measurements, so to put the measurements in this book took quite a bit of time and effort. There are some Italian meals that take days to create so you will find the preparation, cook time and difficulty for every recipe in the book. My parents moved from West Virginia before I was born so what that meant was I spent all my summer vacations visiting my Grandparents, aunts, unclesand cousins in West (by God) Virginia. I think it was given that name because of the fertile soil it possesses. The gardens that were created werebeyond beautiful, originally gardens were what helped poor people survive but my family took it to a different art form. You can t imagine how large the plants grew and how tasty the vegetables were. It was from these gardens that a number of these recipes were born. Tomatoes, Peppers,Zucchini, Cucumbers, you will recognize this in the recipes. Herbs like Basil, Rosemary, Parsley, Oregano, were abundant. Like I said earlier, wemonetarily were poor but rich in imagination and culinary skills.
